Layered Fruit Smoothie

Ingredients

  • 1 mango (peeled, pitted, and coarsely chopped)
  • 1 1/4 cups plain low-fat yogurt
  • 4 tablespoons honey
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon freshly grated lime zest
  • 1 banana (peeled, and chopped)
  • 10 medium strawberries (washed, and hulled)
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon freshly grated lemon zest

Preparation

In a blender, whirl the mango; 3/4 cup plain low-fat yogurt; 2 tablespoons honey; the fresh lime juice; 2 ice cubes; and the freshly grated lime zest until smooth. Divide mango-lime smoothie between 2 straight-sided glasses and set aside.

Rinse blender, then whirl the banana; the strawberries; 1/2 cup plain low-fat yogurt; 2 tablespoons honey; the fresh lemon juice; 2 ice cubes; and the freshly grated lemon zest until smooth. Layer banana-strawberry smoothie onto mango smoothie, gently spooning mixture around inside edge of each glass to create a clean horizontal line.

ingredients

  • 1cups baby spinach leaves, rinsed
  • 1 cup Broccoli
  • 2 tablespoons crumbled goat cheese or feta cheese
  • 1 tablespoon spring onions, chopped
  • 1 egg
  • 2 egg whites
  • a few drops of Tabasco sauce
  • pinch of freshly ground black pepper
  • 1 teaspoon olive oil

    Preparation

  • Wilt the broccoli & spinach in a non-stick frying pan over high heat, stirring frequently, or place spinach in a microwave-safe bowl, cover with vented plastic wrap and microwave on high for 1 to 2 minutes until just wilted. Press out the excess liquid and chop coarsely. Place the spinach in a small bowl. Stir in the cheese and spring onions.
  • Blend egg, egg whites, Tabasco and pepper briskly with a fork in a medium bowl. Heat oil in a 18- to 25-cm non-stick frying pan over medium-high heat until hot. Tilt the frying pan to swirl oil over surface. Pour in egg mixture. Immediately stir egg mixture with a heat-resistant rubber spatula or fork for a few seconds. Then use the spatula to push cooked portions at the edges towards the centre, tilting the frying pan to allow uncooked egg mixture to fill in areas around the edges. Sprinkle spinach mixture over the omelette. Continue to cook until almost set and the bottom is golden. The entire cooking process should take about 1 minute.
  • Use a spatula to fold one-third of the omelette over the filling. Tip the frying pan and, using the spatula as a guide, slide the omelette onto a plate so that it lands, folded in thirds, seam side down.
