Real Men Eat Beef...


Stuffed blue-cheese burgers

  • 2 pounds ground sirloin
  • Italian Seasoning packet
  • 1/2 cup crumbled blue cheese, preferably Stilton
  • 4 rolls, split and toasted

Preheat a grill or cast-iron skillet, wiping down the grate or the skillet with olive oil before heating over a medium-high flame.

In a medium bowl, combine the ground sirloin, and Italian seasoning packet. Mix well using your hands. Form into 8 thin patties. Create small craters in the center of half of the patties, leaving an edge of about a quarter inch all the way around, and place a scant 2 tablespoons of blue cheese in the center. Top each with another patty, pinching the seams together. Make sure the stuffing is completely covered.

Cook the burgers over medium-high heat until medium-rare; 4 minutes per side on the grill, 41/2 minutes per side in a skillet. Be gentle when you turn the burger so it doesn't break open. Serve the burgers with your favorite toppings
